In this paper we report the results of a monitoring carried out on the hygienic-sanitary quality of 38 fresh vegetables samples and 48 ready-to-use minimally processed salad samples, produced in Sicily and sold to the regional markets; each sample has been analyzed for total aerobic mesophylic bacterial count, total and fecal coliforms, Listeria monocytogenes and Salmonella spp. presence and to characterize some of the most representative isolated bacterial colonies. Obtained results showed that, for all analyzed samples, Salmonella and L. monocytogenes are absent, but their hygienic-sanitary profile seems to be, in some case, questionable as regards the total aerobic mesophylic bacterial amount (just 60% ? of samples conforms to the referring values) and total coliforms (medium count I.O×105 UFC/g); in 5 samples (basil and parsley for I gamma, mix salad for three IV gamma samples) fecal coliforms (medium count 5×l03 UFC/g) have been detected. Moreover, some non pathogenic Listeria species, L. seeligeri, L. ivanovii, L. innocua, L. welshimeri and L. grayi, and many Enterobacteriaceae bacterial species have been identified.
