Since ’70 years many studies and investigations have highlighted a close relationship between agriculture and environment, thanks to technological innovations due to unforeseen factors that will challenge agricultural development as a whole. With regard a growing demand of “clean agriculture”, surfaces and production conducted by organic farming methods have registered a significant increase. Nowadays the development of organic agriculture is not linear. In fact the organic agriculture sector, after the fast growing increase until the end of Nineties’, is registering a reorganization due to the limited demand in European and Italian markets. On the supply side and in the European Union, policy instruments were instrumental to persuading small farmers to convert to organic farming by providing financial compensation. On the demand side, aggressive promotion and marketing strategies of retailers and supermarkets have created new market opportunities, not exploited at all.
