Empirical survey on the consumption blue fish in Sicily

This paper proposes an analysis of the results of a survey given to 320 direct consumers blue fish in Sicily. The aim is to highlight some of the main factors that characterize the structure of the blue fish market demand, also as a contribution to the understanding of the dynamics and trends of which this sector is recently revived in the Mediterranean basin. Therefore, the paper, preliminarily, lingers at the level of the leading countries of blue fish users, in order to analyze its temporal evolution path from the beginning of the 2000s.
