Local knowledge and business activities as positional goods for territorial development. A survey on a sample of firms in the canned food In this thesis, are analyzed the characteristics of enterprises in the sector of oil preserves in the provinces of Ragusa and Siracusa with the objective of verifying the structural and organizational levels achieved by businesses and draw inspiration for the development of the local production. Firstly the present work traced the historical, political and economic events which led changes in the Italian agrifood system in order to increase the competitiveness of local products. This thesis is made up for three parts: the first part analyzed the evolution occurred in the business of agriculture, fisheries and agro-industry, both from the point of view of the numerical strength of business and labor and the structure of the same. The second part deals with all aspects about the quality and safety of food, the most responsible for the changes occurred in food businesses. In particular it stressed the importance of the food chain for the production of safe and competitive nutrients. It analyzed, in terms of legislation, aspects of the production and marketing of safe products for the protection of human health. It reference was made to the quality, the designation of origin and typical products as a tool for competitiveness of the agrifood system. For reason, it was considered useful to refer to the notions of transaction economics cost and the Economics of Conventions Theory which are essential media to overcome the problems related to safety and enhancement of production. The third part presents the framework of the corporate in the examined area. For this purpose, it proceeded to a direct survey of companies to identify the main aspects of the organization, the level of technology, the level of production and marketing of products. It has also proceeded to carry out the SWOT analysis that, by analyzing the strengths and weaknesses of companies in the local context and social environment in which they operate, establishes the competitive level in which the sector is plaied. Finally, it briefly cover aspects related to the success product. The picture that emerged identifies a reality of micro companies strongly linked to family traditions and area in which they operate and also a high skepticism among stakeholders that despite the small business, seeking market spaces.

Indagine su un campione di imprese del comparto delle conserve alimentari In questa tesi vengono analizzate le caratteristiche delle imprese del comparto delle conserve sottolio nelle Provincie di Ragusa e Siracusa con l’obiettivo di verificare i livelli strutturali e organizzativi raggiunti dalle imprese e trarre utili spunti per lo sviluppo del sistema locale produttivo. Il presente lavoro ha, innanzitutto, ripercorso gli eventi storici, politici ed economici che hanno indotto i mutamenti nel sistema agroalimentare italiano al fine di aumentare la competitività delle produzioni locali. Nella tesi si possono individuare tre parti; la prima parte ha analizzato l’evoluzione avvenuta nelle imprese dei settori agricoltura, pesca e industria agroalimentare, sia dal punto di vista della consistenza numerica delle imprese e della manodopera, sia della struttura delle stesse. La seconda parte riguarda tutti gli aspetti inerenti la qualità e la sicurezza degli alimenti, maggiori responsabili dei mutamenti intercorsi nelle imprese alimentari. Nello specifico si è sottolineata l’importanza assunta dalla filiera agroalimentare per la produzione di alimenti sicuri e competitivi; sono stati analizzati, sotto il profilo legislativo, gli aspetti inerenti la produzione e la commercializzazione di prodotti sicuri per la tutela della salute umana; infine, si è fatto riferimento alla qualità, in particolare alle denominazioni di origine e alle produzioni tipiche, quale strumento di competitività del sistema agroalimentare. A tal fine si è ritenuto utile riferirsi alle nozioni dell’economia dei costi di transazione e della Teoria economica delle Convenzioni quali supporti indispensabili per il superamento delle problematiche connesse alla sicurezza e valorizzazione delle produzioni. Nella terza parte viene presentato il quadro delle realtà aziendali nel territorio esaminato. A tal scopo si è proceduto ad un’indagine diretta delle aziende per cogliere gli aspetti salienti dell’organizzazione aziendale, il livello tecnologico raggiunto, i livelli produttivi e la commercializzazione dei prodotti. Si è altresì proceduto allo svolgimento dell’analisi SWOT che, analizzando i punti di forza e di debolezza delle imprese del contesto territoriale e sociale in cui si opera, stabilisce il livello competitivo cui si colloca il comparto. Infine vengono brevemente trattati gli aspetti legati al successo commerciale del prodotto. Il quadro emerso ha individuato una realtà di micro imprese fortemente legate alle tradizioni familiari e territoriali in cui operano ed un elevato scetticismo tra gli operatori del settore che, nonostante le piccole realtà aziendali, ricercano nicchie di mercato.
