The national food system is embedded in a context that is characterized by a series of challenges that will inevitably end up its success or the loss of competitiveness in the international marketplace and community. In the final analysis challenges derived from two changes, economic and institutional. To characterize the first is the growing and widespread globalization, which assumes significance not only from the point of production, but also of consumption, the second one is characterized by the complexity of the institutional stakeholders from different levels of skills exercised. This work tries to evaluate the importance of quality certification mark to a protected geographical indication (PGI) as a competitive factor in the analysis of differential profitability / competitiveness. In particular, we will discuss the case of companies in the Consortium of table IGP Mazzarrone, with particular reference to the problem of access to markets and the recognition of a premium-price compared to the price of a product is not certified. Based on these considerations, we have analyzed the implications for the competitive strategy of the producers, and particularly in those in which the producers who believe in the role of the certification of the production of table grapes IGP as a factor in the genesis of competitive advantage in business internationally. The work is divided into two parts and is divided into six chapters. The realization of this thesis has seen in the first chapter, the analysis of literature and especially of the main economic theories that interpret the certification of quality as one of the "invisible assets," and the search for documents and templates specific assessment intellectual capital of the company. In the second chapter has identified three quality systems in the European regulation (signs of protected origin, geographical indications and traditional specialties) that if they specify characteristic peculiarities and differences, by examining the evolution of Community law regarding the certification of fruit and vegetable production. In the third chapter are briefly treated the main instruments of measurement and representation of intangible resources, the growing role played by knowledge in the so-called "knowledge economy". The second part of the work begins with the fourth charter. We analyze the general profiles of certified agricultural products, and in particular the economic importance in the national economy from the production with certification mark (PDO, PGI, TSG). In the fifth chapter, after talking briefly about the activities of the Consortium of table IGP Mazzarrone and the market, we have analyzed the information we have gained by subjecting farmers to a specially designed questionnaire. Finally, in the sixth chapter contains some reflections can be seen from the results obtained.
Il sistema agroalimentare nazionale è inserito in un contesto che si caratterizza per una serie di sfide che inevitabilmente finiranno per decretarne il successo o la perdita di competitività negli scenari internazionali e comunitario. In ultima analisi le sfide discendono da due cambiamenti, quello economico e quello istituzionale. A caratterizzare il primo è la crescente e diffusa globalizzazione, la quale assume significato sotto l'aspetto non solo delle attività di produzione, ma anche di consumo; il secondo, quello istituzionale è caratterizzato dalla complessità dei soggetti interessati dai diversi gradi di competenze esercitate. Il lavoro si divide in due parti e si articola in sei capitoli. La realizzazione di questa tesi ha visto nel primo capitolo, l'analisi della letteratura in materia ed in particolar modo delle principali teorie economiche che interpretano la certificazione di qualità come uno degli invisibile assets, nonché la ricerca di documenti e modelli specifici di valutazione del capitale intellettuale dell'impresa. Nel secondo capitolo sono stati individuati i tre sistemi di qualità presenti nella regolamentazione europea (le indicazioni si origine protetta, le indicazioni geografiche protette, e le specialità tradizionali) di cui se ne specificano caratteristiche peculiarità e differenze, esaminando anche l'evoluzione della normativa comunitaria riguardante la certificazione delle produzioni ortofrutticole. Nel terzo capitolo sono brevemente trattati principali strumenti di misurazione e rappresentazione delle risorse immateriali, per il crescente ruolo assunto dalla conoscenza nella cd knowledge economy . Nella seconda parte del lavoro che inizia con il quarto capitolo, si analizzano i profili generali dei prodotti agricoli certificati, ed in particolar modo l'importanza economica assunta nell economia nazionale dalle produzioni con marchio di certificazione (DOP, IGP, STG). Nel quinto capitolo, dopo avere parlato brevemente delle attività del Consorzio di tutela dell uva da tavola I.G.P. di Mazzarrone e del mercato di riferimento, sono state analizzate le informazioni che abbiamo ottenuto sottoponendo gli imprenditori agricoli ad un questionario appositamente predisposto. Infine, nel sesto capitolo sono riportate alcune riflessioni desumibili dai risultati ottenuti.
