This study analyses the building, environmental and management aspects of Sicilian confectionary companies located in the DOP (Denominazione di Origine Protetta/Protected Origin of Denomination) of Ficodindia dell’Etna (Etna Prickly Pear) and of San Cono (San Cono Prickly Pear),IGP (Indicazione Geografica Protetta/Protected Geographic Indication) Arancia Rossa di Sicilia(Sicilian Blood Orange), Arancia di Ribera (Ribera Orange), Pesca di Leonforte (Leonforte Peach) and the Limone di Siracusa (Syracuse Lemon) to identify any design shortcomings which impinge on production phases. The results of this study will be taken into account in formulating new design objectives.
