Food quality and safety play an important role in human health. In order to detect the quality of typical Sicilian agricultural products we propose to use two physical techniques: Delayed Luminescence (DL) and X-ray fluorescence spectroscopy (XRF). In detail, DL will be used in order to determine external parameters of quality in relation to different storage conditions, while XRF will be used in order to detect heavy elements traces. A multi-parameter approach will lead to infer statistical correlations between measured physical parameters and food alteration. The current research project aims to establish a protocol for a fast and reliable food certification.
