The research described in this thesis aims to study the versatility of probiotic strains belonging to the Lactobacillus rhamnosus species in order to make renewed probiotic foods and to formulate clinical strategy to restore homeostasis condition in different human ecosystems. To these ends L. rhamnosus H25 strains, belonged to the D3A collection and previously isolated from Pecorino Crotonese cheese, was studied in order to evaluate functional foods feasibility.
