Commercial success of fresh-cut products is definitely related to the purchase of ready-to-eat fruits and vegetables that are well suited to the new lifestyle of the population. As fresh perishable products, they require maintenance along the cold chain and, therefore, need continuous temperature monitoring throughout the supply chain in order to ensure a safe product for the consumer. In order to investigate a low-cost sensor system able to perform the required monitoring task, a prototype system based on an Arduino Uno R3 board was specially designed. The purpose of this work is to validate the device that can guarantee monitoring along the food supply chain. The idea is to provide producers with the ability to continuously monitor the temperature parameters of a given product and consequently ensure safe food for consumers.
