The "Piacentinu" ennese, a typical Sicilian cheese from the province of Enna, is distinguished by its strong ties with its territory of origin, its geographic, historical, cultural, social-economic characteristics. Its development and distribution on the market could be valid instruments for satisfying the growing demand by consumers for variety and quality, which comes from a greater attention to the relationship between food, health, environment and the quality of life. Moreover such processes, if opportunely used, may be a way of relaunching less known areas, but not for this less meaningful, not only from gastronomic but also from a cultural-environmental point of view.
