The durum wheat sector has a significant importance in the context of world agriculture. Despite the recent changes in the cultivation techniques, processing and marketing, the cereal sector plays an important role in terms of total income and employment generated through the different production segments. Southern Regions of Italy like Sicily are characterized by the presence of a large number of processing enterprises of grain products but the economic size of them is small and they are often managed with medium-low technological processes. One of the most relevant processes regards the techniques for pest reduction adopted inside the mills. This paper explores the economic convenience of introducing the heat technique for pest control within the mills. As the heat technique reduces environmental impact of production process getting increased the food security of cereal productions, the results of the paper show that this technique can be is potentially profitable for the mills.
