Considering the success of Etna wine-growing in recent years, this study aims to quantify the waste and by-products of Etna wine-growing to see which technical and organisational solutions can be found to improve the sustainability of the Etna wine-growing network. This network was studied through direct interviews to elucidate the main structural, organisational and management factors to create a complete picture and subsequently evaluate its strengths and weaknesses, its limits and opportunities for development. The results of the research make a positive contribution to quantifying the waste and by-products from Etna wine-growing characterised by an evolving process induced by changes in habits and life-styles and by EU and national legal frameworks.
