The present paper proposes the analysis of a direct research conducted with 300 consumers of almonds in Sicily. The aim is to emphasize some principal factors that characterize the structure of the demand for almonds, both with and without shell, and also to contribute to the understanding of the dynamics and the developmental tendencies of which this sector recently results to revive worldwide. Therefore the paper concentrates mostly on the principal nations which uses shelled almonds, to analyze the relative evolution in time from the beginning of the years of 2000.
