This work aimed to describe the floral biology of globe artichoke ‘Nobre-UPF’, a cultivar developed for industrial purposes. Plants were grown in an experimental field in South Brazil (28°12’ S, 52°23’ W). The capitulum diameter, number and morphology of bracts, as well as the flower characteristics, during the capitulum development and flowering period (from September to December), were evaluated. A 15 capitulum developmental stages scale was established. During the different stages, alteration in size, colour and consistency of the floral structures was observed. The number of bracts per capitulum was 150. The medium diameter at the commercial stage (stage 4 for industrial uses) was of 9.2 cm and the capitulum diameter at achenes ripeness (stage 15) was of 15.6 cm. The capitulum has a large number of flowers (about 1,400), that are tubulated, hermaphodite, with similar morphology and centripet flowering. The flower corolle is gamopetal and the sepals are modified to form the pappus. The androecium has 5 stamens, with free filets and fused anthers. The ovary is inferior and the fruit is an achene. Protandry occurs in the reproductive structures.
