In consideration of the importanceof the vegetables in theMediterranean diet and of the use,at times indiscriminate, of fertilizersin field, the present workwould to verify the presence ofnitrite/nitrates in the leaf vegetables(lettuces and spinaches), tocompare it to the current agriculturalroutines that make use of nitrogenousfertilizers.To confirm the presence of nitrite/nitrates the nitrate reductase(NR) has been determined. NR isone of the three enzymes responsibleof the transformation of thenitrogen in the plants and, itsdetermination, represents an usefuldosing to calculate the degree of useof the nitrogen in the plant.
