On black olives cultivar "Moresca" grew in Sicily, some physical-chemical characteristics important for quality have been determined. Discriminant analysis applied to results has not allowed the classification of samples in definitive groups. These results show a constant quality of fruits apart from production area (coastal or inside hills), while problems related to pest control make safer the hilly inside productions.
