This work covers the “francesismi” of Sicilian culinary vocabulary, with particular attention to those documented in the seven-nineteenth-century lexicography and / or twentieth century. This is a sample of 21 words related to food: agglassari, assassunari, bbidì, bbriòscia, croquettes, cunzumè, cutuletta, deserri, fracassè, gattò, ggilè, matalottu, miletta, mirìngulu, monzù, ntramé, pavigghjottu, purè, rragù, champagne, timmala. The mediators of French words in Sicily, and presumably in other dialects too, were those belonging to middle and upper classes of the island, with their daily speech - most often a Sicilian largely italianized (which is usually represented by the Sicilian lexicography seventeenth and nineteenth-century) - and, specially, with their full adherence to the fashions from France and the subsequent acceptance of a variety of objects and products, and then of words, from French source.
Sono qui studiati i francesismi del lessico culinario siciliano, con particolare attenzione a quelli documentati nella lessicografia sette-ottocentesca e/o novecentesca. Si tratta di un campione di 21 parole legate alla gastronomia: agglassari, assassunari, bbidì, bbriòscia, crocchè, cunzumè, cutuletta ,deserri, fracassè, gattò, ggilè, matalottu, miletta, mirìngulu, monzù, ntramé, pavigghjottu, purè, rragù, sciampagna, timmala. Mediatori dei vocaboli francesi nel siciliano, e presumibilmente anche negli altri dialetti, furono gli appartenenti alle classi medio-alte dell’isola, con il loro parlato quotidiano ― il più delle volte un siciliano largamente italianizzato (quello che è in genere rappresentato dalla lessicografia siciliana sette e ottocentesca) ― e, soprattutto, con la loro piena adesione alle mode provenienti dalla Francia e il conseguente accoglimento di tutta una serie di oggetti e prodotti, e quindi di parole, francesi.
