In the present work ready to use salads, packaged in non modified atmosphere, were analysed to study the dynamic of microbial population during storage at 4°C. The microbiological analyses were carried out using the plate count method in different media and the lactic acid bacteria were identified by molecular methods as PCR/RFLP of 16S rDNA. The samples showed microbial counts higher than microbiological criteria generally used and the identification results showed the dominance of Leuconostoc mesenteroides species.
