In the present work ready to use salads, packaged in non modified atmosphere, were analysed to study the dynamic of microbial population during storage at 4°C. The microbiological analyses were carried out using the plate count method in different media and the lactic acid bacteria were identified by molecular methods as PCR/RFLP of 16S rDNA. The samples showed microbial counts higher than microbiological criteria generally used and the identification results showed the dominance of Leuconostoc mesenteroides species.

Abstract
In the present work ready to use salads, packaged in non modified atmosphere, were analysed to study the dynamic of microbial population during storage at 4°C. The microbiological analyses were carried out using the plate count method in different media and the lactic acid bacteria were identified by molecular methods as PCR/RFLP of 16S rDNA. The samples showed microbial counts higher than microbiological criteria generally used and the identification results showed the dominance of Leuconostoc mesenteroides species.File in questo prodotto:
