A total of 80 yeast strains, belonging to Saccharomyces cerevisiae species, were isolated from musts and wines on a selective medium during the entire wine fermentation. The Saccharomyces cerevisiae strains were tested for β-glucosidase activity, but only one strain was positive. The β-glucosidase enzyme level was determined in the different cell compartments and in the culture medium. This enzyme resulted as linked to the cell wall or confined within the periplasmic space. No activity was observed in the culture liquid or inside the cells.
